Hello all, John here. I have been BBQ'ing for a while now using direct heat, I took my plunge into offset smoking last year but due to work and family life not really had a play yet. Huge fan of good BBQ food and anything hot and spicy, combine the two and it's heaven for me.

Hello all, hopefully somebody on here can provide me with some knowledge.
