Pulled out the oven at 202f - foiled and wrapped in towels now. Its a little tougher than I'd like but it pulls well enough. Bark is actually not bad either and can taste the heat from the cayenne in it.

Will post a photo of the finished product!

Yeah I made the decision last week after looking at hundreds of YouTube videos - Bradley is getting the bung, and once we have moved into the new house, Big Green Egg is going to be the next purchase! It certainly looks incredible and really versatile.

Hmm - I haven't put this amount of meat in there all at once before. Temps are struggling at the moment but slowly climbing. Anticipating a finish time of around 3pm.

Supposed to be set and forget but my Bradley is a temperamental piece of kit and I tend to check it a lot to make sure the smoker ...

Evening folks,

Getting the Bradley Digital fired up for a long night of butt action tonight. Barbecue tomorrow afternoon and then going to freeze some for a birthday party next weekend. Only got tonight to do this so a couple of red bulls should see me through.

Portability isn't an issue at all, I had just never considered upgrading from the wsm. Food for thought though!

My thoughts are exactly the same - but a decent offset definitely seems more money than its probably worth. Not ready to give up on the idea altogether though! I'll let you know how I ...

The only option I have for shipping that amount of iron in one piece is by boat, and the costs, as I'm sure you can imagine, are through the roof. And the landmann offsets just don't have the same build quality it seems - just my opinion!
