I know this is late, but may help in the future. Try lighting coals on one end of your firebox and let it burn across, and as it gets to the other side add unlit charcoal to the side that has burnt out. I would place some charcoal on the lit side to make sure that it will light and work its way back ...

You can but you will need to do it in cold weather. Controlling the heat from the charcoal will be your biggest problem. You may be better off getting a smoke generator that just produces smoke and very little heat. What are you using to smoke your bacon now?

I don't think there is a 3 probe thermometer on the market for home use. You may be able to find a commercial one, but that may be cost prohibitive. You will probably have to buy another 2 probe thermometer.

Be careful cooking by temp only also. I use temp more for a guide as to when something is done. I will start checking to see if something is done at a certain temp, but will go by feel for final test. All pieces of meat are not the same and will not cook the same. I would trust your Thermapen before ...

If you want your ribs "barkier", I would try smoking at a higher temp for the whole cook or raise the temp at the end of the cook. Just like doing a reverse sear on a steak. I cook my BB ribs at 270°F. The take only about 3 hours but they have the bark you are looking for. Spares may take less time ...
