noob recipe question!!

noob recipe question!!

ok guys, did my first ribs this weekend. Smoked them using oak chunks for about 5hrs on a UDS at about 250F.

They turned out ok, meat was nice but not quite fall of the bone. I think it was because the ribs were pretty heavy at about 2.2kg.

Anyways the rub recipe i was using turned out pretty bad, it was from an AMerican book - Americas best bbq , the memphis style ribs.

Looking back i think that i may have got the units all wrong, it says 1/4 cup of pepper and 1/4 cup of chili, so this with all the other stuff made it rather hot!!

Now what is a cup? hardly an SI unit but i guess my interpretation could be wrong as i just used a cup from the kitchen.

help me out in what went wrong....

I'm just about to head off to bed as I'm up at 03:30 in the morning but here is a very brief response. Cups are believe it or not a standard measurement, they are specific and cup measures can be bought from Morrisons for about £1.99 per set which covers 1 cup, 1/2 cup, 1/3 cup and 1/4 cup, the same goes for spoons too.

One coment i'd make is that when using american recipies if they call for chilli powder a lot of the time they mean chilli con carne powder (a mix of ancho chillie powder, cumin and some other bits) when they are refering to chilli pepper powder they spell it chillie.

I too have made this mistake in the past.

I've posted a Chilli powder recipe which uses ingredients which are easy to get over here but like bbq rubs there are thousands of different ones you can try.
