I stumbled on this forum yesterday when I was looking for a meat syringe, I bought one in the US 15 yrs ago and it just packed up.
I do the low and slow, my wife who is Serb/Croatian does the grilling and Peka cooking.On the family holiday home on the Island of Hvar we built a stone BBQ and Smoke House, in Krusevac Serbia friends run a Take away BBQ pit for whole pigs and lambs.

Welcome, I think you will find lots of fun here, as to building a BBQ pit for whole hogs n lambs here in the UK my money is on you running into the local authorities' planning and "Health and bleedin' Safety" Czars. :cry:

However If you succeed don't forget to invite the forum to your inaugural bash
