cold smoking

hi, having trouble with my new smoking cabinet keeping the temp low .i am using a heated element and this is great for higher temps .
what am i doing wrong ?dave

Welcome to the forum. Have not yet got round to trying cold smoking so can't help you there - there are a few people on the forum who do cold smoking so maybe they can chip in. Maybe worth you saying what equipment you've got

Cold smoking is a completely different beast to hot smoking - as the name suggests, it is smoking without heat.

Two ways you can possibly achieve this (although not the only ways):

1) Run a pipe from the stack of your hot smoker to another box, separated sufficiently so that you are getting the smoke, but not the heat. A bit like this random picture I googled:

2) Use something like the ProQ Cold Smoke Generator:



I have a CSG (I actually bought the whole cold smoking kit, including the cardboard smoker box), and can recommend it.

Also note that - depending on what you are cold smoking - a summer day isn't necessarily a good time to do it; although with this summer, you'll possibly be ok. I have a pile of cheese to smoke, and I'm planning to do it overnight, as I think it might get a sweat going today.

got a steel cabinet now using charcoal over oak sawdust just about got it ok .
how long do you smoke garlic for?
