Hi, I'm Nick

It's great to have found this forum - it's like coming in from the cold!

I became fascinated/obsessed with 'cue about 4 years ago after reading the "Going Whole Hog" chapter of Jeffrey Steingarten's "The Man Who Ate Everything".

Since then, I've been States-side 4 times to learn more about the art and culture of BBQ and have had the privilage of spending time with pitmasters in GA, AL, TN, KY, NC, MO, MI and IL - ironically, perhaps, the ash cloud scuppered a visit to TX earlier this year.

I've also been fortunate enough to be allowed to work in the prep kitchen and pits of a well-known (to me, at least) BBQ restaurant, being taught by a Memphis in May Grand World Champion.

I've worked with industrial-sized Ole Hickory Pit equipment over there; my UK kit comprises a Bradley, a ProQ and a 4-burner gas grill. My wood of choice is Apple (does anyone know where a good supply can be found?), I prefer St Louis to Babyback ribs, and love vinegar-chile sauces.

My dream is to open a smokehouse here in the UK.

I'm looking forward to being a part of this community :D

Welcome aboard Nick. Sounds like you have a lot of good experience. It's great to have you here. Have you thought about participating in the competition circuit over here, I'm sure you'd do well with the knowledge you have.

Wood supplies can be found in a few places here are a couple the top one can supply Large bags of Apple Chips if you call them ask for Sandy or Barry and say BBBQS said to call:

Hey Steve

Thanks for the welcome. I haven't really considered joining the circuit as competition Q and restaurant Q are different products/different labours of love. But having had a peek at pitmasters.co.uk, I might put in some practice during the closed season and give it a go next year.

Hi Chris

Great to be here. BBQ stories?... I have enough trouble telling bbq tales in under an hour without getting sidetracked, so writing them could be a time consuming challenge for me and the reader!

I do have a few - perhaps more about the people I've met (some of it you just couldn't make up) than the Q - and will do my best to share shortened versions of my experiences where I can. The tallest of tales will have to wait for when I turn up on the circuit!
