Well chaps,
I am a tad emotional, I abandoned charcoal 10 years ago, citing children, but in reality it was the fat I was going blind and riduclous temps and lack of visual acuity didnt mix.

Over the last 10 years various indifferent gas grilling episodes haveunfolded and no-one has died of food poisoning. Last weekend we went back and didnt exactly pull off lo and slow but managed some tasty ribs with help of sighted wife and the electric oven. Followed this up with smoke roasted wings on Weds that sent a shirt from this world to the next.

Today ever loving wife was sent to butchers for 2" inch sirloin for severe grilling, she returned with 4" square sirloin, remarking how the butcher was not sure this waswhat was needed. unabashed and with the help of kevlar gloves I set about my return to serious charcoal based grilling. Oh my goodness, a seared crust that was bark like, with an inside so moist <insert your own>, it was a steaktacular triumph. I then went offset to smoke some Jalepenos and some freshly purchased purple garlic from the IoW farm, all now stored safely under olive oil.

So thanks to all here who have re-fired my inaginagion, who helped me believe that I could grill with confidence, and to many more happy hours in smoke filled goodness,

i am happy you are grilling with charcoal again you can grill healthy with charcoal,I have health issues also am have written about grilling healthy as I am a physician who love bbq. I hope you are healthy and going to your physician.

When I read in one of your earlier posts that you had lost your sight but were still grilling I thought f**k me how does he manage that?

Being one who thinks experiencing something is the best way to understand, I recently tried tending to an overnight cook without turning on the garden lights on. Now while this doesn't leave me completely blind, my dark garden makes it pretty close.

Suffice it to say, confusion, burnt fingers and a whole lot of mess ensued, teaching me that I wouldn't make a very good blind Pit Master.

So kudos to you sir for having the conviction to be able to do something like this! :D
