Just a quick hello from me and a big thanks to all those that have posted on here, great for a smoking newbie like me. Just done my first shoulder of pork with alder wood(sorry for got to take photo's). Turned out superb. Next it'll have to be a brisket.

Congratulations, if brisket is going to be only your second smoke it's a very brave move. In all honesty I'd do a few more smaller smokes until you are sure how your smoker behaves. However I'm sure you'll receive some excellent advice on how to do it.
