Hi from newbie :)

Post by mattler »

Hi,
Just realised how I`m only "scratching the surface" with bbqing! so registered here!
Had many years experience of marinading meat and cooking on bbq but I`m now seeing a completely different level!
I`ve been cooking on coals but now looking at purchasing a decent gas item and also getting into smoking despite not having the faintest clue where to start.
Anyway HI :)

I`ve taken the plunge and gone for a stainless 4 burner + side. No particular manufacturer but I deem it to be good build quality and for the price I got it for I couldn`t refuse :)
I`m absolutely loving the fact that I`ve got so much more control over the charcoal and amazed how little gas it uses!!
I`m just a bit unsure about smoking, everytime I`ve used it I have put a couple of trays with JD woodchips in and they do smoke but I`m just not sure that I`m getting the maximum effect from them??
There doesn`t seem to be any definitive guide on here as to smoking??

There is a reason that gas "grills" are called grills and smokers are called smokers :D . You can smoke on a gas grill but it takes a lot of practice and you won't get as much smoke as you would in a smoker. Does your grill come with a built in smoker box? If not then its down to well soaked chips in punctured foil packets.
I'm not sure what you mean by a definitive guide to smoking? I suggest you peruse the various topics/search engine then ask if you can't find what you are looking for.
In the meantime the basic technique for gas grills is to put well soaked chips (not chunks) into foil pouches which you puncture. This goes on one of the burners turned down low (this is where the experimenting comes in) that will produce SOME smoke but nowhere near as much as a dedicated smoker. If you look at some of the posts showing what gear people have you will find a lot of people who have gas grills also have charcoal kettles and or smokers of one kind or another.

Cheers Keith,
Well I`ve learned something straight away from your post so many thanks. I think what I`m trying to achieve is the convenience of gas with some of the taste attributes from coals. I always thought that this was impossible but everyday`s a school day!
