What smoker should i buy?

Well now you mention it, one or two questions have popped up in my mind.
1. Do you add anything to the clay saucer other than wrapping it in foil?
2. is there any point in me trying out my new toy with non restaurent grade charchoal?
3. do you fill the charcoal basket completely and then add half a chimney of lit coals on.
4. do you open all the vents at the bottom whilst trying to reach temperature?
5. do you leave the vent on the top open to allow the air to flow?
6. How big a saucer should i buy?
7. How do you get your probes from a maverik thermometer inside smoker?

Doesn't the excel have probe holes that fit?

I did find the crimps on the cable end of the redi check probes did sometimes stick in the excel probe hole but nothing a pair of pliers could't fix.

The excels are a tighter fit on the lid sections and together with the brilliant locking system they are likely to unsuitable for trapping the cable in.

Guru do some eyelets if you are after a long terms solution but I'm sure the excel is fine with probe holes.
