I cooked up a brisket and a pork shoulder on the weekend and vacuum packed the left overs.
I put them in thre freezer but wanted to know how long should i leave them in a water bath to heat up again? and can i do this straight from frozen or would i be better of defrosting first?

I've always defrosted first but I think others on here do it from frozen.
It takes about 15 minutes for my bags of defrosted bbq to warm up in a pan of simmering water. It will vary a little depending on how much food there is in your bag though.
At a guess, if it's frozen, I'd reckon 25-30 mins... ish

Could you explain why you warm in a bath of water?, should it be warmer than just leaving it to get to room temp?

It's for reheating it to serve hot. The best way of saving leftovers is to vac pack and freeze, then reheat in the bag using a water bath or pan of boiling water.

I normally would have steamed it, good tip on the water bath.

Good point Al. I always put a flannel or towel in the bottom of the pan to stop the bag melting.

So to clarify, you wouldn't foil it up and reheat in the oven but would place in the hot bath instead?, would you top up with hot water occasionally and presumably the meat reaches the right temp to kill all the nasty bugs that might be lurking in the defrosted meat?
