Second Smoke - Sunday Dinner

Planning Baby Back Ribs in Magic Dust rub and Mojo Criollo Chicken for Sunday Dinner tonight.

Placing 4 racks for ribs (in rub) meat side up on the top grate and 2 hours later the Chicken halves on the bottom grate and smoke for another 2 hours.

Hope that sounds reasonable.

After 2 hours the meat is shrinking off the bone, so I suspect these boys will not last 4 hours.

Wrapped them individually in foil and will keep my fingers crossed but may have to take out early and reheat for the starter.

BTW The rain started when charcoal was in the starter and hasn't stopped but the temp has settled down well.
