Well it WAS heading for a disaster from the start.
Saturday evening, spent two hours looking for the thermometers, finally found them in a garage drawer.. :roll:

So 6 am Sunday, finish trimming meat.

Applied the rub:
1/4 cup brown sugar
1/4 cup paprika
3 tablespoons salt
2 tablespoons black pepper
1 tablespoon cayenne
2 teaspoons dry mustard
