did you do any tests to see if your thermometer is correct, ive read about some peoples being off by as much as 50f

I've received my thermapen now so I shall test the temperature with that. Going to try some pork belly today as it'll be more forgiving.

Well I tested mine in boiling water and it wasn't far off at all, however doing a smoke yesterday and it seemed way off until the final hour when it was accurate compared to a meat probe I've got, I noticed some liquid seep out at the bottom of it so I'm wondering if its somehow got a better seal around it now and therefore more accurate

It all worked out in the end. Tested the temperature with the thermapen via the probe inlet and there was only a couple of degrees between that and the gauge in the lid, presumably due to the different areas. This time the temperature got up quite quickly and I think it was down to the lit coals, I don't think I let my starter coals burn long enough before putting them in.

Pork turned out well!
