If I were you I'd try cooking ribs at 275f, at this temperature I've found the 3-2-1 method far too long and is more suited for the much meatier american spare ribs. I follow 2-1-1 at 275 and they usually come out perfect, always check tenderness with a toothpick or by trying to tear the meat from the bones. If the toothpick slides in easily then you're good to go.

Thanks all, I'll certainly try the 2-1-1 at the higher temperature next time. At £2.50 per rack I figured it was worth me buying and trying, and it was great to have a a distinct difference between the first and second cook. I'll invest in a rib rack now too, shame I'm not going to an Ikea soon for the dish rack!!

Nice progress and a good read, I still haven't tried ribs yet but it's definitely happening soon!

Regarding the smoke, order a box of smoking wood chunks from Paul http://bbqsmokingwood.co.uk/?page_id=20

Tell him what you want and you'll get plenty that will last a long time. That will definitely get your a better smoke flavour.

What did you think to the quality of the meat? - I'm local to Oxford and while I'm getting things right, I'm wondering if I should get some of those instead of the high price (and quality) meat from our local butchers.

Good looking ribs, but those Aldi briquettes were awful last time I tried them - I had plumes of chemical-ey smoke coming out of my BBQ. Try Sainsburys basic lumpwood - great stuff at £4/4kg

Yeah, I'll use up the briquettes run of the mill stuff. I've got plenty of applewood for smoking from a guy who I work with, as well as some Weber Hickory to keep me going. As far as the meat is concerned, they were ok and I'm glad to be learning on these rather than expensive ones. They had these at £19.50 and others at £29.50 too.
