Sorry, yeah, I should have mentioned I want it rare to then let it rest for a bit. I was just seeing if anyone had a rough time estimate. I was cooking for my family and I knew the ribs would take about 5 - 6 hours. I'd have said about the same for the beef rib but if it takes something like 8 hours or so then I'd need to plan for it.
