Suddenly I feel like a complete kitchen newbie all over again, temp's been up and down all over the place! I've thrown the meat on anyway, fingers crossed

It's pretty consistently between 200 and 210F. Could do with it being a little higher but I'm gonna stop faffing and live with it for this cook. Weather's fine up here aside from a bit of wind!
