So it seems that my problems were twofold - firstly those Big K briquettes really suck for giving a high temp and secondly the thermometer in the lid of my unit appears to be out by a considerable amount. I'm testing some lump charcoal now and my ET732 is reading with the one base vent open and the lid half shut, thanks for all the advice!

It may be worthwhile trying to calibrate your gauge or at least work out how much it is out of sync.

I wasn't actually aware that you could calibrate it
it's off by around 50F. Reading up on how you do it I think I know where I went wrong - I initially checked it against my thermapen and it was pretty dead on, but I think I might've messed it up when I tightened it, oops...

Failing that if you dip it in boiling water, as attested by your trusty thermapen, then you will know exactly how "off" it is.
