First Cook

Well thanks to Steve, Saturday will be my first cook...!

Im going for Ribs, with a little rub, corn bread (done in the oven) and i think BBQ beans, done in the smoker.

I've only ever done ribs, so not sure how it will all turn out, but i am looking forward to trying!

I just have a few questions, which i may seem odd...

When it comes to coal, do i just fill the basket up?
and second when I'm done do clean the grill where the meat has been? with my gas i always just burn it off, but I'm thinking that was a stupid idea.

Bud, glad you're happy with your arrival. Steve what a bloke, I just wish there were more people on this site like him.
As for cooking ribs on the pro q a lot of people will have their own preference, but I use the clay saucer method. You can find it from the All weather griller post. After you trim the ribs and remove the membrane try soaking them in apple juice for a couple of hours before you sprinkle your dry rub.

Good luck in what ever you do, just let us know how you get on.

Soaking them in apple sounds like a plan so I'll add that to the agenda.

Grill cleaning, I'm lucky my Outdoorchef gas grill is a kettle style and all my racks, weber & ProQ fit nicely inside for burning off. Pop down to your local £1 shop and get hold of a plastic planting mat, they clip up at the corners and make a waterproof box. Soak your grills in hot (not boiling the plastic may melt it's that cheap) water and washing up liquid. I don't hold to the addage that the build up of flavour by leaving the grills dirty is good. Then again I'm still fairly new to this lucious low n slow business.

I have a big gas bbq, would you recomend i stick the plates in?

I just picked up the best looking ribs I have ever seen, basically has some of the belly in there as well! :D

So it might not be the belly, but the butcher offered to cut more meaty ribs, and i glady accepted.

Give it a go, if the grills fit all you have to do is brush off the carbon dust from the grills.

So had a fantastic time at the weekend! I have to say i am very happy with the end result, although the journey was slightly rougher than anticipated.

So i started on Friday with my pork ribs soaking in apple juice for a few hours, I then made up a Memphis style rub, which i left the meat in overnight. So all good there.

However when it came to the actual cooking, i think i didn’t use enough charcoal, i just couldn’t get the temperature up above 200, it was only towards the end that i shoved a lot more coal in, and finally got the heat up.
For sides I made Boston style beans which I cooked in the smoker, and I have to say I was very happy with the outcome, I also made some Cornbread, which dipped in the saucy goodness was pretty tasty.

Roll on next weekend now! Hopefully the pics will uploand you can see my effrots.
