ceramic grill to smokey

Cooked some chicken and veggies on grill at 350f it was far to smokey and veg tasted horrible bitter in fact.
The Dome was down.Fresh charcoal

Have cooked plenty of low and slow which came out ok

Any Ideas?

Any rub / coating applied ? How long did you cook for?

dont they say smoke too long and it goes bitter ?

Charcoal may be the issue, was it a new bag or maybe damp?

Are you covering the heat deflector with foil/putting a foil tray over it?

I've found that if I don't do this and let the fat and grease land directly onto the deflector they do start to smoke like mad and this could affect the taste.

Yep rub applied cooked for 30 mins I guess, was a bag of charcoal from last year

Was there much sugar in the rub? Just thinking that could have burnt causing the smokey taste.

I guess it could be the charcoal (assuming you have used it before without this effect?), but if it was properly lit & hot as you were grilling, my money would be on something to do with the rub.

The rub wasn't on the veg just salt pepper and evoo, will try another cook Sat
