What Gas fired Kettle smoker?

Good evening.
Looking for some help.
I have recently Quit my job as an estate agent and am in the throws of setting up a street food stall selling ribs, beans and coleslaw ( to start with.) All the recipys are from my friends in Texas and were staples for me when i holidayed out there every summer when i was younger.
I have a Gas fired Kettle BBQ at the moment and though i am getting good results i want to achive great results. My thermostat currently shows that i cant get much below 375f. Now i curently apply dry rub and then cook for 25 min a side, then place in foil, Baste in BBQ sauce then add 1/4 cup of Cola seal the package and cook for a further 40 min. This gives me lovely tender pull off the bone but i know i can get better.
Is there a Kettle ( gas fired ) that will go to the magic 225f and can have a smoke tray. Or should i go for an automated gas fired smoker if so which one.
Please advise.
Thanking you in advance.
