So i've taken the plunge and bought a cheap offset smoker off ebay, got some coal. The smoke wood is coming, got the chimeny and the alien heat probe. The pork is in the frdge, herb and spices at the ready and a case of Stella to wash it all down. I'm going to have fun

Can only see a single flaw in your excellent plan, Stella for a lo and slow?? would favour a session beer 10 hours on the artois will make the pork pulling veeeeery tricky!
