Newbie Questions - Clay Saucer & Lumpwood

I've been using this site as a resource for a while but can't find the answers I need. So I'm hoping you lovely people can help me out, apologies if these have been asked before.

I've been grilling & smoking on a Weber grill for a while and have just got myself a WSM 47 which I've now used twice for ribs and I'm loving it.

I'm using the clay saucer method but have only used the upper grill grate. I only realised today the lower grate sits on the clay dish. Should I buy a smaller dish or take out the water pan? Alternatively will it be okay where it is?

I've used cocoshell briquettes up to now but it looks like CPL aren't doing them any more. I was thinking of switching to their restaurant lumpwood as I don't have to pay delivery unlike Big K. Was just wondering if anyone had used it and if one's better than the other.

Leave the saucer in place, if you take the water bowl out you will have direct heat which isnt good. If you are worried about the size of the saucer get a smaller one, for the sake of £6 it will save some heart ache if it really is that close to the grate. Lump or briquettes work, I had 5 wsm's on the go this weekend all burning heatbeads and all lasted 16 hours, before me shutting them down, with fuel still in them.

Holy cow, 5 at once is some going.

Thanks for the advice. I'll look to pick up a smaller dish, and have a look round for alternative briquette dealers.
