Hi all,
am thinking about smoking one xmas turkey breast and not the other, ie remove one breast, smoke and then put back on the carcass, sopeople have a choice of smoked or not.
do you think this is feasible? or should I just smoke the lot?

If you are going to remove one breast, then roast the rest of the carcass or crown I would think there would be a good chance of it drying out. Better to take both breasts off the crown, roast one, smoke the other then poach the carcass to clean it up and arrange the breasts on the dry, clean hygenique bones medieval style. (I wouldn't look to redress it with feathers though). ;) Or forget about redressing them and just slice both cooked breasts and present them nicely plated. :D
