I jerked my chicken, and I have to say it was pretty damn tasty.

I've had the pro q up at 250 for about 7 hours, and absolutely amazed how it's stayed hot - still
Going I've just shut the vents.

Only issue I had was the miss's didn't like the jerk sauce that I made in the smoker. I thought it was excellent but apparently I'm a greedy git. Chicken smoked takes on a whole new level.

When smoking poultry try wrapping it in cling film and chilling until the following day. The smoke flavour will be amplified. I love smoked chicken the day after sliced up and on a butty with homemade slaw.
