Now that i've got the bbq, what's any easy baby back ribs recipe to start with?
If all goes well, i'll try a beer can chicken next

I'd say that chicken's easier to start with as you're not maintaining the temperature for quite so long.... But if you're comfortable with that, I'm just about to do babybacks for this evening.
They've been soaking in apple juice for 24 hours. Going to remove & sprinkle with salt & pepper & leave for a few hours.
Am planning on cooking them for about 5 hours indirectly with a foil pan of water underneath - 3 hours uncovered at between 200 & 250F, then 1 hour wrapped in foil with some of the apple juice I used for the marinade, then remove from the foil, brush with a bit of BBQ sauce & cook for another hour or so with a couple more brushes of BBQ sauce to get a nice hardened sweet glaze. I'll post some pictures up later / tomorrow.

Beer can chicken is probably the easier of the two, as KS mentions there's not quite so much dependancy on maintaining a correct temperature for as long. However, whichever one you decide to do, enjoy it and don't forget to take notes, something I never thought to do and have regretted it.
