To all you out there what are the ingredients that are used again and again eg say paprika and if so what variety and why?

2 absolute essentials:

Sea Salt - I use Maldon
Black pepper corn: I use Halon Mon. But grind them when you need them (or grind enough for a week)

Onion powder
Garlic powder
Cayenne
Chipotle
Smoked Paprika
Cumin
Oregano
Lots of sugar :lol: (brown, turbinado etc)

Haven't really noticed a difference in brands tbh. It's all good.

I think Paprika can vary quite a lot. Need to check who I'm currently using but definitely go with smoked. A lot of the stuff out there is little more than orange colour imho

May i recommend buying one of these! We use ours a lot grinding cumin seed etc. The work really well.

Paprika does vary wildly. I go for the smoked noble sweet paprika. If it is not marked as sweet, then it is probably hot paprika. If i want heat, I prefer to get it from other more flavourful sources.

Paprika is a bit of a religion in eastern Europe - particuarly Hungary. Take a wander down to your local eastern european or ethnic supermarket (they are everywhere nowadays) and you will be amazed at what you find!

Absolutely superb, and very hot.

I sometimes use it in place of chilli powder if I want to give somethung a kick.

BTW, don't but it from Amazon - that price is a rip off. Less than £2 a tin at Sainsbury's, it's usually either with the other herbs and spices, or in the 'posh' section.

I gree - that is a great brand. Tesco used to sell the smoked sweet variety, but no longer :( you can get it in large 750g this too.
