Hello all, Tom from West Wales...2 years ago I fell in love with US style BBQ after a 3 month trip to there that include stops in Slows in Detroit and Lockhart, Texas. I was blown away and can't believe this type of food isn't more readily available in the UK. Over the last year a few 'smoke houses' have opened in Wales, however I haven't really been satisfied the same way as I was back then (open to suggestions on places to eat but maybe i'll never be!) However the closest Iv'e come was Bodeans' in London which was v good.
Anyway, after hinting for months iv'e had a smoker bought for me and about to get cracking with it. Its the Brinkman Smoke n grill (ECB)..currently in the process of modifying it so hoping for some advice on that too.

ECB mods are all over the internet and easy to do.
An ECB was the 1st smoker that was a manufactured type smoker I ever had, needed some tweaks, but worked.
