Rolled Brisket

Post by Dduffs71 »

I have bought a piece of rolled brisket from Costco today (and a couple of racks of ribs. My question is how to prepare the brisket and smoke it? Do I unroll it? Put it straight on the grill or in a tray (wrapped or not). what sort of temp do i need to achieve in the meat? Many thanks in advance for some wise words of wisdom ;)

You'll want to unroll it.

Personally i cook brisket at 225f and wrap in foil after 6 hrs, then i would cook it to between 200f-204f internal temp'

Yes cut the string off and unroll it so it's flat and then apply your rub.
