Back on topic, I would think that the bbq would be used for open days and general mass feeding rather than low and slow cooks, please correct me if I'm wrong
. If that is the case I would have a look at the flat grill type similar to (but not limited to) this

Sorry buddy for the late reply... Your suggestion is excellent!! I am trying to speak to ASDA about this as I need them to invoice my squadron to arrange payment. Like you said we will be catering on family days ect so a 6 burner is ideal!

How did the shoulder go in the smoker? I use my Webber, but saw an excellent conversion kit for a Webber to make it a proper smoker...

The pork shoulder went really well thank you. I saw you'd asked in my thread in the Low & Slow section. I've just posted a reply.
As for wood, I don't actually use wood for braai's here. I normally braai with lumpwood or briquettes, something like BigK is fairly decent. I was actually saying to my other half the other day that in SA we usually braai with hardwood that you can buy wrapped in those black elastic bands from most petrol garages but that doesn't happen over here. Charcoal and lumpwood is the norm instead. I had actually forgotten just how much proper flavour you used to get from braai wood
Anyway, for chunks of wood to add smoke flavour, many on this forum recommend this chap called Paul Goulden. He's well known around here
