Good afternoon everyone. Just a quick introduction. I'm John, from Nottingham - as mosr of you probably guessed from the thread title ;)

I've been smoking low and slow on my Pro Q Excel for over a year now, mainly as a hobby, but I'm interested in expanding my knowledge of smoking commercially to expand the repertoire of my hog roast business, which specialises in whole-hog pulled pork from free-range, heritage breed pigs.

I'm looking forward to getting to know everyone.

Whole hog pulled pork! Amazing.

What kind of cooker do you use for it?

Hi Sam,

I use Spitting Pig ovens for the whole hogs, they aren't designed for smoking, but I turn the output down really low, and use wood dust in a Pro Q cold smoker to add a little hint of smoke. I'll cook them like that for up to 24 hours and the meat just falls off the bones.

I smoke 'proper' bbq in a Pro Q Excel, but for adding a little smokeyness to the hogs, I use the Pro Q Cold Smoke Generator.

Sorry, crossed wires. The artisan pro Q is a larger version of their original cold smoke generator.
