who's cooking ribs?

I thought I'd ask what everyone else is doing with ribs. I've been trying to source some back ribs which are nice and meaty. Hopefully weighing about a kilo a slab.No joy yet. Can anyone help on this?

Macro have a good supply of backs and very meaty spares at the moment. Do you have one near to you?

You might get lucky in some of the meat production plants around your area. There's one near me which sells spares at £2.50/k, each rack is between 1.8-2 kilo in weight. I like buying from them because their freshly killed and haven't been vacuum sealed in cold storage for ages

Some joker tried selling me spares at £4.40/kg on Saturday. They rung up the 4 slabs and it was £18! I was shocked and told them to forget it...

Went to my usual butchers for some nice meaty back ribs, not 1kg a slab, but still nice and meaty - £5.40 for 3 racks.

I seriously couldn't believe it. I even told her that I'm used to paying £1.20ish for ribs and anything above that is crazy.

She spoke to the butcher and said she would do the lot for £16 as opposed to £18...

I then left.

I must have 7 racks of spares in the freezer, looking to cook them in one go as my gas tank is getting quite light and I was wondering what's the best way to preserve the racks after smoking them, so I can reheat them?....Do I need to buy a vacuum machine or would they do fine sealed up in bags with as much air squeezed out as I can get......need to reheat in water bath, yes?

I pay £2.80 per kilo and usually get 5 or 6 slabs in a 10 kg case. It depends on how much meat you want on your bones and whether you're prepared to sacrifice some trim to get a high quality product. i can't imagine that there is too much meat on a £1.20 rack ...or am I getting ripped off?

Na, £2.80/k for spares are a good price, I think the other member was paying £1.20 for back ribs (lot less meat)
