Hello to all my fellow UK BBQ lovers.

I live in Essex where I use my Big Green Egg pretty much every weekend, I try and cook everything on it and even did the christmas turkey the last 3 years.

I spent 5 years living in Rye, New York where I was introduced to the Green Egg, that is when my BBQ Journey really started.

The guy who sold me my egg gave me some good tips, not US specific just tips for a beginner.

1. Take time to build your fire, stack the lump properly, large chunks at the bottom, then medium then small so as the fire burns down the ash doesnt block the grate and thus the air flow.

2. Don't lift the lid until you reach your meat temp.

3. A decent food thermometer is a must (wireless is great you can watch football whilst you smoke)

4. 190 is the magic number for pulled pork !

5. Beer !
