Hi All, I got my first bag of Big K restaurant lumpwood today. Just opened it and most of the lumps are huge (which is better than a bag of dust). Question is, for low and slow cooking are you better using large lumps or breaking into smaller bits? If I go for large bits I may not fit that much in. We're talking here about some lumps the size of tins of baked beans.
I'd thought of breaking it into bits about 1-2", would I be doing the right thing?

I tend to take the larger pieces out and put them aside for when I need them for long cooks (add one or two each hour after six hours cooking). You will have pieces that are smaller as you go down the bag.
