Hello from west yorkshire
Just a quick hello from me and a big thanks to all those that have posted on here, great for a smoking newbie like me. Just done my first shoulder of pork with alder wood(sorry for got to take photo's). Turned out superb.
Next it'll have to be a brisket.

Congratulations, if brisket is going to be only your second smoke it's a very brave move. In all honesty I'd do a few more smaller smokes until you are sure how your smoker behaves. However I'm sure you'll receive some excellent advice on how to do it.

Can't believe i've just recieved an Maverick ET73 thermometer from the other side of the pond and including p&p it only cost £29. Woohoo i love ebay.
